🛒 Ingredients
- 2 cups cottage cheese (full-fat or low-fat)
- 1/4 cup plain Greek yogurt (for extra creaminess)
- 2 green onions, finely chopped
- 1/4 cup finely shredded carrot
- 2 tbsp finely chopped fresh parsley or dill
- 1 small garlic clove, minced (or 1/2 tsp garlic powder)
- 1 tbsp lemon juice
- 1/2 tsp onion powder
- Salt & black pepper to taste
- Optional: pinch of paprika or red pepper flakes for mild heat
👩🍳 Instructions
- Blend the base
Add cottage cheese and Greek yogurt to a food processor or blender. Blend until smooth and creamy. - Mix in veggies & seasoning
Transfer to a bowl. Stir in green onions, carrot, herbs, garlic, lemon juice, onion powder, salt, and pepper. - Chill (recommended)
Refrigerate for at least 30 minutes to let flavors develop. - Serve & enjoy
Serve with:- Fresh veggies (carrots, cucumbers, bell peppers)
- Whole-grain crackers
- Toasted pita chips
- As a sandwich spread or baked potato topping
